Smoked Mackerel Dip – page 60

This is such a wonderful recipe – there is always a bowl in my fridge, and saves me buying supermarket dips. The dip is so easy to prepare – even my husband will make it in his desperation for more – and has such wonderful flavours. I do like the lime and lots of black pepper. Good with toast, crackers, oatcakes and salad.

Flapjack Bars – page 76

Flapjack has always been a favourite of mine. I love the sweet, chewy texture, so this recipe using those healthy ingredients had to be tried. I do like the addition if walnuts and raisins – the combination of textures works well. Again – very easy to make.

Chocolate Chip Cookies – page 80

My daughter’s favourite – she was making these from packets(!) – so I showed her how to make these, containing healthy ingredients. Fortunately they are easy to make, because they don’t last long. She likes to use different chocolates – milk, plain and white for variety.

Lemon Curd Puddings – page 134

I don’t always make puddings, but couldn’t resist this recipe using lemons – always a favourite. I made 6 smaller puddings in dariole moulds. They were very light and the ground flaxseed gave an extra bite. Served with custard, they were enjoyed by all and will definitely be made again.

Watercress, Walnut, Pear and Roquefort Salad – page 42

I made this as a starter, and thought the combination of ingredients worked really well, with wonderful flavours and textures. I used rocket instead of watercress, and had to soften my pears by gently frying in rapeseed oil until golden.

The authors, Penny Doyle and Audrey Deane, have both worked either as dieticians or in food development. This is a chunky, spiral-bound volume. Colourful and practical and it stays open on the counter. It’s full of information and recipes. The list of ingredients which contain omega-3 will be heartening to anyone who isn’t a lover of fish... oily or otherwise. Nuts and seeds are a good source as well as soya products, kale, rocket, and spinach. If you enjoy shellfish then you’ll be pleased to know that crab, mussels, prawns and squid all have omega-3. All the nutrition information is given for each recipe so you can see it’s no joke.

Seafood is well represented here as you would expect. Seafood Lasagne is smart enough for any bunch of discerning guests even though it uses frozen seafood mix. Makes life easy and keeps the price down. Pissaladiere is a long-time favourite and revives memories of summer in the south of France. It’s almost a pizza and almost a tart, with a tangy topping of anchovies, onion and black olives. You have permission to use bought puff pastry so there is no excuse for not making this dish.

Top 100 Omega-3 Recipes has simple and tasty food and gives sound advice on how to improve your health by eating rather than swallowing supplements.
