Serves two

This is a very quick and easy recipe to cook up and should only take about 15 minutes. It is also very versatile as it can be altered to make a hot and sour noodle soup simply by adding another tin of chopped tomatoes.

Ingredients :

  • 180g cooked king prawns
  • 200g raw prepared squid (washed and chopped)
  • 200g fresh noodles
  • 1 small onion, chopped
  • 1 garlic clove, crushed
  • 1 red chilli, chopped and deseeded
  • 1 tin (400g) chopped tomatoes
  • 25g fresh coriander, chopped
  • 50ml lemon juice
  • 1 tbs sweet chill dipping sauce

Method :

  1. Sweat off the onion, garlic and chilli in a small amount of oil.
  2. Add the chopped tomatoes, lemon juice and chilli dipping sauce to the pan. Bring to the boil and reduce down for a few minutes.
  3. Add the prawns and squid and bring back to the boil. Add most of the coriander, stir well and leave to one side.
  4. Cook the pasta/noodles in boiling water according to the instructions. Drain.
  5. Divide the pasta between the dishes and top with the seafood sauce. Garnish with the rest of the coriander and serve.
