Serves two
This is a very quick and easy recipe to cook up and should only take about 15 minutes. It is also very versatile as it can be altered to make a hot and sour noodle soup simply by adding another tin of chopped tomatoes.
Ingredients :
- 180g cooked king prawns
- 200g raw prepared squid (washed and chopped)
- 200g fresh noodles
- 1 small onion, chopped
- 1 garlic clove, crushed
- 1 red chilli, chopped and deseeded
- 1 tin (400g) chopped tomatoes
- 25g fresh coriander, chopped
- 50ml lemon juice
- 1 tbs sweet chill dipping sauce
Method :
- Sweat off the onion, garlic and chilli in a small amount of oil.
- Add the chopped tomatoes, lemon juice and chilli dipping sauce to the pan. Bring to the boil and reduce down for a few minutes.
- Add the prawns and squid and bring back to the boil. Add most of the coriander, stir well and leave to one side.
- Cook the pasta/noodles in boiling water according to the instructions. Drain.
- Divide the pasta between the dishes and top with the seafood sauce. Garnish with the rest of the coriander and serve.
